It cooks up soft, light, and airy like regular pancakes and definitely is a must try if you have gluten sensitivity or have Celiac disease (like both my children). They can't have even the slightest amount of gluten or it is bad news for them and we have never had a contaminated bag of this particular brand of pancake mix, so it is on my recommended list for sure!
